Aside from vegans and vegetarians, who doesn’t like chicken wings? Based on their efforts to replicate the dish with cauliflower, gluten and other creative ingredients, they’re apparently one of the most difficult animal based proteins for vegans and vegetarians to forsake.
Chicken is the heritage bird in African-American cuisine; and with low country cooking it is almost sacred. While I can occasionally stomach chicken fried with store-bought seasonings if prepared by a skilled cook, I prefer fried chicken prepared more authentically, without basic lemon pepper, Badia/Goya Complete Seasoning and Lawry’s seasoning salt because they’re not inherently representative of true African-American flavors.
Jacksonville’s Trap House Chicken knows how to prepare chicken wings. In fact, they’ve mastered it. Whether drenched in savory sauces, deep fried to a perfect golden brown with a delectable crunch or naked fried flats adorned with Cajun seasoning and dipped in blue cheese or ranch dressing, Trap House Chicken is killing it. With hand cut potato wedges and fries to accompany your chicken order, there is truly something special to experience at this food truck turned takeout spot.
I LOVE wings! So, we decided to make a stop in Jacksonville to visit the food truck turned restaurant cult brand of THC Trap House Chicken located at 5907 Merrill Rd, Jacksonville, FL 32277.
The Chicken here is versatile af! Their offerings include “Southern Fried Baptist Wings,” the classic flavor of African-American cast iron buttermilk fried chicken; their drunken “Hennessey Wings,” flavored with a savory and sweet sauce, and my absolute favorite “Krab Tray Wings” dripped in an amazing butter crab sauce poured over for an extra flavor boost. Honorable mention goes to their “Loud Lemon Pepper,” which could have just a tad bit less seasoning the way my blood pressure set up.
Each bite was fried to golden perfection, not greasy, and with their own distinct flavor creating individual identities to be both enjoyed, and RESEPCTED! Yep, you must respect the wings at this joint. My nephews were killing the “Oxtail Flavored Wings”! Yes, ma’am. They have breaded fried chicken wings drenched in a decadent oxtail gravy.
Trap House Chicken is the brainchild of Mr. Rich H., a super cool brother from the local neighborhood who wanted to provide something different and exciting for the Jacksonville community. As the acronym for the restaurant name suggests—THC, these wings relieve stress while taking you on a food high!
After learning about their bomb fried ribs and classic friend chicken sandwiches, we’re returning to Jacksonville during August in celebration of National Black Business Month as a part of our national tour to try them out as well. Worth a visit if you’re in the Jacksonville area.

Omg, you had to post this, we have been on a no fried food, beefless, porkless 40 day fast at our church for the last 40 days. we have one more day as of today 8/6/20 and as always I open your emails to see where you’re eating this week and the many places you visit and the one thing I have been craving pops up on the page. I could not stop my mouth from watering looking at one of the foods I can eat anytime. I love to open your posts to see where you are and what you are eating.
